Weetbix loaf classic

Based on the famous breakfast of champions this Weetbix and fruit loaf is a lovely classic recipe, so moist and delicious, sure to be a hit with the whole family.

It can be eaten plain or with the added decadence of butter.

This is a great easy loaf, that makes two normal sized loaves or one big one. You can vary the fruit to suit whatever you have on hand any mixture of cranberries, apricots, sultanas, dates etc. Or just sultanas or dates.

Most of us have leftover Weetbix crumbs at the end of a packet, so keep these to use in baking.

The other great thing about this recipe is it uses pantry basics and no fancy ingredients, so if you have a good store of baking ingredients this will be lovely to make over and over again.

This loaf would be perfect for a morning or afternoon tea, in lunch boxes or to feed hungry workers.

It freezes beautifully too, so you could double the recipe and freeze extras for another day.

You can also slice the loaf and individually wrap slices to freeze and put into lunch boxes. It’s also delicious served as a dessert with a caramel sauce.

Ingredients:

  1. Weetbix, crushed
  2. C white sugar
  3. C sultanas (or your choice of fruit)
  4. tsp baking soda

115gms butter, softened

  1. C boiling water
  2. eggs
  3. C self-raising flour

Method:

  1. Preheat oven to 170C.
  2. Add the first five ingredients into a bowl.
  3. Pour over the boiling water and leave to stand for five minutes before mixing together.
  4. Add beaten eggs and flour and mix again.
  5. Place mixture into two greased loaf tins
  6. Cook for about 55 to 60 minutes, or until the skewer inserted comes out clean.
